On the Ingredient tab: the gram figure is an estimate based on a typical grams-per-cup value for that specific ingredient. It's accurate enough for the vast majority of home cooking and baking, but it assumes a fairly standard way of filling the cup — spooned and leveled for flour, packed for brown sugar, and so on. A different scooping technique can shift the real weight by a meaningful margin.
Cooking — soups, stir-fries, sauces — is generally forgiving of small measurement differences; a slightly heaping tablespoon of onion rarely ruins a dish. Baking is closer to chemistry: the ratio of flour to fat to liquid to leavening determines whether a cake rises properly, a bread dough develops the right structure, or cookies spread correctly.
